A vegetarian foodie in Japan...

Wow!  I've been too busy with my new life that I haven't had a chance to update.  So so sorry about that!  I've made some things that I've forgotten to photograph but I'll post the recipes anyway.

I made the best breakfast ever:


This French toast sandwich is super delicious!  You must try it!  I made mine with homemade French toast because we don't have instant and, well, it's better.

I made my guac:


I made this yummy sandwich:


Quite tasty!

I made this bean salad and this pasta salad both without photos, but both I recommend!

In Adventures in Dining, I found a local Indian joint.  Quite delicious:


I tried Starbucks' Lemon Creme Frapp (it was just okay):


And I had some super tasty お好み焼き:

A vegetarian foodie in Japan...

Is winter over yet?  I'm really tired of the bitter cold.  I want to feel the sunshine on my face.  I want summer.  Believe or not I'm excited that it will be in the 50s this week.  I have made some super delicious things but I got into a fight with my internet and it refused to work.

Anyway, on the the food!

I made some borscht.  It was good but then I left it out all night and I'm afraid it was no good after that.


I made the best pumpkin soup ever!


It was so unbelievably tasty!

I made a veritable Valentine's Day feast for my boyfriend:

I made a to-die-for grilled cheese.  Seriously, never making it the regular way again.

A vegetarian foodie in Japan...

Wow, okay, so I've been trying to write this blog since this morning but my internet keeps saying no.  I guess since it snowed yesterday the internet just gave up.

Anyway, I made some things, so here ya go!

Coconut "Chicken"


So Japan has this super great soy meat.  It takes forever to prepare but the result is awesome.  Anyway, I modified this recipe.  I also found that the soy meat doesn't need as long to cook as chicken.  I will definitely make this again.

Nutella Brownies:


Of course these were excellent.  Pretty much goes without saying.

Vegetarian Chipotle Nachos:


I already bought all the stuff to make these again.  'Nuff said!

I tried my hand at homemade cottage cheese.  It was easier than I thought but it takes a lot of milk and produces just a little cheese.



The first picture is before I added the milk and salt, the second is after.  It's very good.

I made a Snickers dessert:


Basically take a mini Snickers bar, wrap it in a wonton wrapper and fry it.  Yum!

I made Pasta with Pumpkin Cream Sauce:


This was better the second day after flavors melded a little better.

I also indulged in Coconut French Toast:


I can't even tell you how delicious this was.  Just make it for yourself!

In Adventures in Dining my bf and I tried out Biokura Cafe:


It's hard to find but this was for sure the best burger I've ever had in Japan.  Must go back there.

We had tea and cakes at Janat:







Their set up is so beautiful and the tea was delicious.

And my bf bought me a vegetarian bento box:





So yummy!

A vegetarian foodie in Japan...

Hey I made some food!

Srircha Mac & Cheese:



OMG this was the best mac and cheese I've ever had.  So delicious!

Slow Cooker Veg Stew:


I highly recommend you pre-cook the onions before putting them into the slow cooker.  This was way too oniony and I had to throw it out after the first day. 

Burrito Bowl:


Beyond delicious.

Slow Cooker Tomato Soup:

Sadly, I forgot to take a picture of this. But believe me when I say it's the best tomato soup I've ever had.  I'm going to try it without the parm next time.

Spanakorizo:


Quite tasty.

My boyfriend made me this super delicious vegan Japanese curry.  It was so perfect:

A vegetarian foodie in Japan...

Well, I've wasted no time getting back into cooking (and eating).  Here are some things I've made.

The first thing I did was whip out the ol' slow cooker.

I made this soup:


Now I realize you can't get Ro-tel in Japan (or maybe you can at import stores I dunno but you could probably make a mock up of it).  It was pretty good.

Next I made some breakfast items.

This sweet oatmeal:


And this savory oatmeal:


Both were yummy!

I also made a beet salad with a mustard vinaigrette (I swear I will never learn to spell that word):


I just basically threw together what was in the crisper.  It was perfect.

Finally, my boyfriend took me to Brown Rice Cafe in Shubuya.  I had this wonderful vegan meal:


I am continually surprised how many vegan/vegetarian eateries there are here in Tokyo.  I'm so glad I live here and not in some rural area.

明けましておめでとう!

Well 2014 is in full swing here in Tokyo.  It's Monday so today many people return to work and business carries on as usual.  If you want to see a city of approximately 13 million people empty come to Tokyo for New Year's.  It's is a time when many people return to their hometowns.  I believe very few people call Tokyo their hometown.

After returning to Tokyo right before New Year's Eve, the only person I wanted to see was my boyfriend.  We had ourselves a "staycation" staying warm inside, watching movies and Japanese shows, and eating tons of food.  My boyfriend cooked special New Year's dishes which was a new and wonderful experience for me.  I was so glad to spend New Year's with him.

A vegetarian foodie in Japan...

Hi all!  I've been cooking up a storm lately but I haven't found the time or the energy to post about it.  So without further adieu...

I made some Buffalo Chickpea Tacos:


The chickpea mixture was awesome (and I didn't make the tacos vegan sorry but you can make them however you want) but I want to try this next time with flour tortillas.  The corn were a bit too dry.

I whipped up some Marinara:


And put it on some gnocchi I wasn't too impressed with.  I won't be buying that again Costco.

I made the best Mozzarella Sticks and ate them next to some French Onion Soup:


The red stuff is cocktail sauce because that's what I dip my mozz sticks in like a boss.  Both of those recipes to die for.  Cook 'em I say!

I made some everything bars to snack on.  I replaced the apricots with a dried fruit mix and almonds with pumpkin seeds:


So yummy!

I also made some killer Cranberry Sauce:


And finally some tasty Artichoke Pasta Sauce:

A vegetarian foodie in Japan...

I have two soups that I just made that I couldn't wait to share with you.

They are both really delicious!  Perfect for cold weather!

First is Spicy Tomato Soup:


I think I died and gone to food heaven.  A tomato soup with bleu cheese!  Why is this the first I'm hearing of this?!?!  It is so good that I wanted to eat the whole pot!

Next I made Cheesy Vegetable Chowder:


So there are some soups to keep you warm!

A vegetarian foodie in Japan...

Hi all!  Sorry I've been so bad with updates.  :(

October was officially the busiest month of my life.

Anyway, here's some food!

I made some Rachael Ray curry:


It was pretty good.

Next I made some killer Salted Caramel Apple Dip:


It really took all my willpower not to finish the whole batch in one sitting.  I added a little more salt and a little less brown sugar because I'm sassy like that. Incredibly delicious!

I also made some to-die-for Pineapple Salsa:


I made two changes.  First I used habaneros because my jalapeños haven't arrived yet and second I used cilantro because it's salsa so duh.  And I paired it with weird chips because apparently Japan won't eat Doritos unless they are flavored.  Basically you can't get plain tortilla chips at your local market.  You have to head to Costco or an import store.  Don't even ask how many bags of plain tortilla chips I just ordered from Amazon.

Next I made some delicious vegetarian gyoza:


I used the recipe above only I added tofu.  Perfect.

I also tried my hand at soy milk ramen:


I made some minor changes like I didn't have kabocha, mushrooms or bean sprouts.  Overall it was so good and I will make it again.  I want my boyfriend to try it.  

In Adventures in Dining I sampled some food from the VegeFest 2013:



I had some fake Tandoori Chicken at Ain Soph:


I had a veggie burger at Pink Cow:


And I tried some Hot Ginger Ale:


It's SUPER bubbly but made my sore throat feel better.
